Scrambled Egg Stir Fry recipe
This is a really easy stir fry that takes barely any time to prepare. It’s perfect for the whole family.
Ingredients:
4 eggs
3 or 4 spring onions
100g fresh prawns
Small piece of root ginger
Large handful fresh beansprouts
1 tbsp. soy sauce
1 tbsp. sunflower oil
Method of Preparation:
Finely chop the spring onions and mince the ginger. Lightly beat the eggs in a bowl.
Heat the oil in a work until hot and then add the prawns. Stir fry them for a minute or so or until they begin to brown.
Add the ginger and then tip in the beansprouts and half of the spring onions.
Stir fry for thirty seconds and then turn the heat down to medium and tip in the eggs.
Leave the eggs to set for a few seconds and then use a spatula to loosely move the eggs around the pan. Once all of the egg is set, add the soy sauce and let it cook for a few minutes.
Serve by sprinkling the spring onions over the top.
