Peanut Pork Stir Fry recipe
Peanuts are a classic flavour in stir fries and they are absolutely delicious. If you’re cooking this for someone who is allergic, you could use some toasted sesame seeds in place of the satay sauce.
Ingredients:
- 4 pork chop fillets, fat removed
- 1 red pepper
- 1 onion
- Handful fresh green beans
- 2 tbsp. soy sauce
- 3 tbsp. smooth peanut butter
- 1 chilli
- Juice of one lime
- Splash of soy sauce
- 1 clove of garlic
- 2 tbsp. sunflower oil
Method of Preparation:
Finely slice the pork chop fillets.
Prepare the pepper by removing the seeds and the pith and slice it into thin strips. Slice the onion into half-moons. Take the tops and bottoms off of the green beans.
Prepare the peanut sauce by putting the peanut butter, chopped chilli, lime juice, soy sauce and garlic clove into a food processor. Blitz until completely smooth.
Heat the oil in a wok and drop in the peppers and onion. Cook them for 3 or 4 minutes or until softened, then remove from the work with a slotted spoon.
Add the pork to the hot oil and stir fry for five minutes or so. Add the peanut sauce, the green beans, 2 tbsp. soy sauce, and the pepper and onion. Cook through for a couple of minutes, then serve hot.
Serve this dish with fluffy rice to mop up the peanut sauce.
